Adam's Blackcurrant Jam

Now you're growing blackcurrants what do you do with them all? This is the most delicous jam, not too sweet but a good set and keeps well.

Blackcurrants
Water
Raw cane Sugar

Weigh the blackcurrants.
Put in a large pan and add water to JUST cover.
Add the same weight of sugar as blackcurrants.
Bring to the boil and simmer for until a set is achieved, about an hour. I put a small plate in the freezer to test for a set. Put a small smear onto the frozen plate.
Meanwhile, put your jars into the oven at 110C to sterilise them for 15 mins.
When a small smear sets on the frozen plate the jam is ready to pot up.

A few rough chopped juniper berries will add an occasional burst of juniper. A lovely surprise.
